Early Jalapeños have the same heat and flavor of their relatives—a mild 2,500 Scoville units when dark green and as hot as 8,000 units when red and fully ripe—but will grow faster and with better yields in cool temperatures. If harvested regularly, these sturdy 18-inch plants can produce loads of 3-inch peppers right up to the first frost.
Seven weeks before outdoor temperatures reach 65°F, sow seeds indoors 1/8 to 1/4 inch deep in a light seed-starting mix. Keep moist and warm—around 80°F. Plants emerge in 7 to 20 days. After they have their 3rd set of leaves they can be transplanted into 4-inch pots and should get at least 14 hours of bright light each day. Fluorescent lamps work well.
When outdoor temperatures average 65°F or higher, transplant into well-drained garden soil that has been amended with compost and a granular, low-nitrogen fertilizer. Arrange plants 10 inches apart in groups of 3 to provide shade for roots and fruit in the hot afternoon sun. Mulch, and side-dress with granular, low-nitrogen fertilizer after they set fruit.
Cut rather than pull the milder green peppers in 60 days and the hotter, red or orange peppers in 75 days.
