German chamomile is a cheerful annual herb with sweet, daisy-like flowers which are often used in calming teas.

Indoors, 4 to 6 weeks before your average last frost, press the tiny seeds onto pots of seed-starting mix. Do not cover: they need light for germination which will take one or two weeks. Water gently or mist to keep moist.

When seedlings are just 2” tall with 4 leaves, transplant into containers or into average, well-drained soil in full sun, 8 inches apart. Water when soil is dry below the surface, before plants are wilting.

Plant directly in the garden in average soil as soon as the soil can be worked in the Spring. Scatter the tiny seeds in a sunny row or bed and tamp down but do not cover. Keep moist until germination. When seedlings are 2 inches tall with 4 leaves, thin to 8 inches apart.

Harvest German chamomile flowers when the white petals have not yet started to fold back over the stem. Comb the stems with your fingers until you’ve caught several flower heads, and pull them from the plant. Dry them in a single layer in a dark warm dry place for one or two weeks and store in an airtight container.
